MAKING FALAFEL (MIDDLE EASTERN RECIPE) MADE OF CHICKPEAS

Falafel Ingredients and Preparations


Falafel is a deep fried ball or patty made from ground chickpeas, fava beans, or both.


Falafel is a traditional Middle Eastern food, commonly served with a pita bread which

acts as a pocket, or wrapped in a flatbread known as taboon; "falafel" also frequently refers to a wrapped sandwich.


Falafel became a common form of street food or fast food in Palestine as well as in some countries and in Israel as well.


The croquettes are regularly eaten as part of meze.


It was also eaten by Mizrahi Jews in their countries of origin.


Ingredients:

4 cups dried garbanzo beans

2 large onions

1 whole garlic head


Preparations:

Soak the chick peas overnight and drain( see images below)






Combine beans, onions, garlic, parsley, and a little bit of hot pepper.


Grind twice (suggested is an electric meat grinder for large volume of falafel). Add a pinch of salt, pepper, cumin, and a bit of baking powder. Mix thoroughly.


The mixture is shaped into balls or patties. This can be done by hand or with a tool called an aleb falafel (falafel mould).


The mixture is usually deep fried, but you can bake it in the oven as well.





Falafel is often served with flat or unleavened bread
